1 stick of butter
1C packed brown sugar
1C white sugar
1tbs vegetable oil
1tsp vanilla extract
2tsp baking soda
1 3/4 C flour
1 C peanut butter
1-2 C quick oats
1-2 c morsels of your choice
Preheat oven to 350. Combine melted butter and sugars in a large mixing bowl until well mixed. Add rest of the ingredients in order, mixing well after each addition.
H loves to help add the ingredients. I’ll fill the measuring cup or spoon and he dumps it in. He likes to help mix the batter too…even if it’s just holding the bowl for me.
Scoop with a rounded tablespoon. (I use a 2 TBS measuring spoon for big cookies like the ones in the first picture) Bake 10-12 minutes
I usually divide the batter in half or into thirds and make different batches in one go.
I made these with cocoa powder, toasted coconut, and white chocolate chips.
You can add variety by adding cocoa powder, different morsels( chocolate chips, m&ms, white chocolate chips, coconut, nuts of your choice, candy bar bits, etc.) If you add the vegetable oil it gives the cookies a more brownie-like texture (which I prefer 😀 )
